The process for producing black teas differ between tea producing regions, but the process always involves four basic steps, withering, rolling, fermenting, and firing. The traditional "orthodox" method produces larger pieces of leaves. The leaves are spread out and allowed to wither in the sun (sometimes in the shade for finer verieties). After the leaves are soft enough, they are rolled. This is done by hand or machine. the rolled tea is then broken up and allowed to oxidize fully. In the final step the leaves are fired to stop further decomposition. This is usually done in an oven. The final product is black in color.
