These unfermented teas are produced from the bud and the first two leaves. The leaves are allowed to dry and are then heat treated to prevent frementation (oxidation) which would rot the leaf. In China, many of the finest green teas are still produced by hand, though some mechanization is starting to appear. Traditionally, the fresh leaves are layed out in thin layers on bamboo trays and sun dried for one to two hours. The leaves are then roasted briefly until they become moist and soft. Steaming is also used in some parts of China. After about five minutes the leaves are rolled into a ball. The balls are then placed almost immediately back in the roasting pans, before being rolled a second time or left to dry. After a few hours the leaves turn a dull green and change no further. The leaves are then sifted to separate by size. Japanese tea processing has become somewhat more mechanized, but the process is similar.
