These semi-fermented teas are produced in China and Taiwan (Formosa). The leaves are plucked and then processed immediately. They are wilted in the sun and then shaken in bamboo baskets to lighty bruise the edges of the leaves. The leaves are then spread out to dry until the leaf's surface turns yellowish. The edges of the leaves turn a redish color as a result of the chemicals within the leaf oxidizing. The China oolongs' fermentation is halted after about 1.5 to 2 hours by firing, leaving the leaf 12-20 percent oxidized. The China oolong gives a orangy-brown liquor when infused. Formosa oolongs undergo fermentation until they are about 60-70 percent oxidized, giving them a darker, almost brown liquor. These teas are usually whole leaf, meaning that they are never rolled or broken.
