Pu-erh
This interesting tea comes from the Yunnan Province in south-west China. It was unknown outside of China for many centuries. Pu-erh is produced from a large-leafed variety of Camellia sinesis native to the Yunnan Province. The local climate and soils produce a very rich earthy flavor which is aged to an elemental flavor by a process that has been developed over centuries. There are two types of Pu-erh, black process and green process.
After drying, the teas are then aged up to 30 years, though pu-erhs exist that are hundreds of years old, before being marketed through the town of Pureh. Loose and compressed vareties are available. Pu-erh is the only tea that actually gets better with age. If the processed correctly and stored properly, pu-erh can be an investment, as its value can increase over time.
